Aubergine schnitzel

I saw this recipe online and thought it looked great. It’s a grilled aubergine with the skin pulled off flattened out and dipped in breadcrumbs.

Served with pickled onions and cherry tomatoes, onion rings, and a tangy yoghurt garlic sauce
