Today we’re making a delicious, simple dish: Salmon Steaks with Capers and Feta Cheese — easy to prep, full of flavor, and ready in about 30 minutes!

🍽️ Ingredients for 2 servings:

  • 2 salmon steaks (skin on or off)
  • Salt & pepper
  • Olive oil 8–10 cherry tomatoes, quartered
  • A handful of black Greek-style olives (stone-in, dry jar kind)
  • A few sprigs of fresh thyme
  • Zest and juice of ½ a lime
  • Crumbled feta cheese (as much as you like)
  • 1 tsp capers
  • A pinch of paprika
  • Optional: aluminium foil and baking paper for lining

🔥 Instructions:

  • Preheat your oven to 200°C / 390°F.
  • Line small ovenproof dishes with foil and baking paper.
  • Drizzle with olive oil, sprinkle salt & pepper.
  • Coat the salmon steaks in the oil mixture and place them in the dish, skin side down.
  • Add tomatoes to one end and olives to the other.
  • Sprinkle over thyme, lime zest, and juice.
  • Top with feta, capers, and a dusting of paprika.
  • Wrap into parcels and bake for 15 mins, then rotate and cook another 10–15 mins.
  • Optional: open the parcel for the last 5–10 mins to brown the feta.

Serve hot — straight from the Pyrex if you like!
